  • Refried beans

  • Sour cream

Instructions

  1. Prepare the Chile Colorado: In a large pot, combine the beef chuck, beef broth, guajillo chiles, onion, garlic, cumin, salt, and pepper. Simmer until the beef is tender, about 2 hours.
  2. Make the Creamy Cheese Sauce: In a separate saucepan, melt the butter, whisk in the flour, then slowly pour in the milk, stirring constantly. Add the cheddar cheese, salt, and pepper, and stir until smooth.
  3. Assemble the Burritos: Warm the flour tortillas and spread a spoonful of refried beans down the center. Top with cooked rice, the Chile Colorado beef, and a drizzle of the creamy cheese sauce. Roll up the burritos, top with more cheese sauce, chopped cilantro, and a dollop of sour cream.
