  • 1 small yellow onion (diced)
  • 3 garlic cloves (minced)
  • 1 cup dry orzo pasta
  • 2 cups low-sodium chicken broth

  • 2 cups fresh baby spinach
  • 1/2 tsp Italian seasoning
  • Salt and black pepper to taste
  • Chopped fresh parsley for garnish (optional)

Instructions

  1. Heat Olive Oil: Heat olive oil in a large skillet over medium heat.
  2. Cook Sausage and Onion: Add sliced chicken sausage and cook until browned. Add diced onion and cook until softened.
  3. Toast Garlic and Orzo: Stir in garlic, then add orzo and toast lightly.
  4. Add Broth and Simmer: Pour in chicken broth, bring to a boil, then simmer until orzo is tender.

Notes

  • Use any variety of fully cooked chicken sausage—garlic herb or sun-dried tomato flavors work well.
  • Swap spinach for kale or peas if desired.
