10 lasagna noodles
2cups cooked shredded chicken
1cup ricotta cheese
1cup shredded mozzarella cheese
1/2cup grated Parmesan cheese
1cup prepared basil pesto
1 egg
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1cup heavy cream
1/2cup shredded mozzarella (for topping)
Chopped parsley for garnish (optional)
Instructions
Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish.
Cook lasagna noodles according to package instructions. Drain and lay flat on parchment paper to prevent sticking.
In a large bowl, mix shredded chicken, ricotta cheese, 1 cup mozzarella, Parmesan, pesto, egg, garlic powder, salt, and pepper.
Spread about 2 tablespoons of the mixture onto each noodle and roll up tightly.
Pour half of the heavy cream into the bottom of the prepared baking dish.
Place roll ups seam-side down in the dish.
Pour remaining cream over the roll ups and top with remaining 1/2 cup of shredded mozzarella.
Cover with foil and bake for 25 minutes. Remove foil and bake an additional 10-15 minutes, until bubbly and golden.
Garnish with chopped parsley if desired and serve warm.
Notes
Use rotisserie chicken for convenience.
Can be assembled ahead of time and refrigerated before baking.
Substitute cottage cheese for ricotta if preferred.
