Ingredients

Units Scale

Chicken and Vegetables

  • 2 cups cooked shredded chicken breast
  • 1 tablespoon olive oil
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 3 cups fresh spinach, chopped

Sauce and Seasoning

  • 1 can (10.5 oz) cream of chicken soup
  • 1/2 cup sour cream
  • 1/2 cup milk
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Cheese and Optional Ingredients

  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cups cooked pasta or rice (optional)
  • Nonstick cooking spray

Instructions

  1. Preheat and Prepare: Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish using nonstick cooking spray to prevent sticking.
  2. Sauté Aromatics and Spinach: In a large skillet, heat olive oil over medium heat. Add diced onion and sauté for about 3 to 4 minutes until softened. Add minced garlic and cook for an additional 30 seconds until fragrant. Stir in chopped spinach and cook until wilted, about 2 minutes.
  3. Combine Ingredients: In a large mixing bowl, combine the cooked shredded chicken, sautéed onions, garlic, and spinach. Add cream of chicken soup, sour cream, milk, Italian seasoning, salt, and black pepper. Stir together thoroughly until all ingredients are well mixed. If desired, fold in cooked pasta or rice evenly.
  4. Assemble Casserole: Pour the combined mixture into the prepared baking dish, spreading it out evenly. Sprinkle the shredded mozzarella cheese and grated Parmesan cheese evenly on top of the mixture.
  5. Bake: Place the casserole in the preheated oven and bake for 25 to 30 minutes, until the casserole is bubbly and the cheese on top is melted and golden brown.
  6. Rest and Serve: Remove the casserole from the oven and let it rest for 5 minutes before serving. This allows the casserole to set and makes it easier to portion.

Notes

  • For extra richness and tang, substitute Greek yogurt in place of sour cream.
  • Add a handful of cooked bacon for added flavor and texture.
  • If using frozen spinach, make sure to thaw fully and drain well to avoid excess moisture.
  • This recipe can be made using gluten-free pasta or rice to keep it gluten-free.
  • Store leftovers covered in the refrigerator for up to 3 days and reheat thoroughly before serving.
