  • 4 cups fresh spinach (chopped)
  • 3 cups cooked shredded chicken breast
  • 1 can (10.5 oz) cream of chicken soup
  • 1/2 cup sour cream
  • 1/2 cup milk
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 1/2 cups shredded mozzarella cheese (divided)
  • 1/2 cup grated Parmesan cheese
  • 1 cup cooked white or brown rice
  • 1/2 teaspoon paprika (optional)

Instructions

  1. Preheat the oven and prepare the dish: Preheat the oven to 375°F (190°C) and grease a 9×13-inch casserole dish.
  2. Sauté the vegetables: In a skillet, sauté onion in olive oil until soft. Add garlic and cook for another minute. Stir in spinach until wilted.
  3. Combine the ingredients: In a bowl, mix chicken, sautéed vegetables, cream of chicken soup, sour cream, milk, Dijon mustard, salt, pepper, 1 cup mozzarella, Parmesan, and rice.
