Pasta:
12ounces fettuccine or penne pasta
Chicken:
1 tablespoon olive oil
1pound boneless skinless chicken breast, cut into bite-sized pieces
Salt and black pepper to taste
Sauce:
2 tablespoons unsalted butter
8ounces cremini or white mushrooms, sliced
3 cloves garlic, minced
1 teaspoon dried thyme or Italian seasoning
1/2cup chicken broth
1cup heavy cream
1/2cup grated Parmesan cheese
Chopped parsley for garnish (optional)
Instructions
Cook Pasta: Boil pasta until al dente, then drain and set aside.
Cook Chicken: Season and cook chicken in olive oil until golden and cooked through. Set aside.
Prepare Sauce: Saute mushrooms, garlic, and thyme in butter. Add broth, cream, and Parmesan cheese. Simmer until thickened.
Combine: Return chicken to the skillet, add pasta, and toss to coat.
Serve: Garnish with parsley and enjoy!
