Pasta:

  • 12 ounces fettuccine or penne pasta

Chicken:

  • 1 tablespoon olive oil
  • 1 pound boneless skinless chicken breast, cut into bite-sized pieces
  • Salt and black pepper to taste

Sauce:

  • 2 tablespoons unsalted butter
  • 8 ounces cremini or white mushrooms, sliced
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme or Italian seasoning
  • 1/2 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Chopped parsley for garnish (optional)

Instructions

  1. Cook Pasta: Boil pasta until al dente, then drain and set aside.
  2. Cook Chicken: Season and cook chicken in olive oil until golden and cooked through. Set aside.
  3. Prepare Sauce: Saute mushrooms, garlic, and thyme in butter. Add broth, cream, and Parmesan cheese. Simmer until thickened.
  4. Combine: Return chicken to the skillet, add pasta, and toss to coat.
