- 2 tablespoons olive oil
- 1 pound boneless, skinless chicken breasts, diced
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup corn kernels (fresh, canned, or frozen)
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon dried thyme
- 1/2 teaspoon paprika
- 1 tablespoon all-purpose flour (optional, for thickening)
- 2 tablespoons chopped fresh parsley (for garnish)
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add diced chicken and cook until browned and cooked through. Remove and set aside.
- In the same skillet, add onion and sauté until translucent, about 3-4 minutes.
- Add garlic and cook for 1 minute until fragrant.
- Stir in the corn and cook for another 2-3 minutes.
- Return the chicken to the skillet.
- Pour in the heavy cream and chicken broth, then stir in salt, pepper, thyme, and paprika.
- Simmer for 5-7 minutes until the sauce thickens slightly. For a thicker sauce, stir in the flour and cook for another 2 minutes.
- Garnish with chopped parsley and serve hot.
Notes
- You can use rotisserie chicken for a quicker version.
- Frozen corn should be thawed before using.
- Serve with rice, mashed potatoes, or crusty bread.
