- 2 chicken breasts, sliced thin
- 2 tablespoons Cajun seasoning
- 2 tablespoons olive oil
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup grated Parmesan cheese
- 12 oz penne pasta
- Salt and pepper to taste
- Chopped parsley, for garnish
Instructions
- Cook penne pasta according to package directions. Drain and set aside.
- Season chicken slices with Cajun seasoning.
- In a large skillet, heat olive oil over medium-high heat. Add chicken and cook until browned and cooked through. Remove and set aside.
- In the same skillet, add bell peppers and garlic. Sauté for 3-4 minutes until softened.
- Reduce heat to medium. Add heavy cream and chicken broth, stirring to combine. Bring to a gentle simmer.
- Stir in Parmesan cheese and cooked chicken. Simmer until the sauce thickens slightly, about 3-5 minutes.
- Add cooked pasta and toss to coat in the sauce. Season with salt and pepper to taste.
- Garnish with chopped parsley before serving.
Notes
- Adjust the level of Cajun seasoning to control the spice.
- For a lighter version, use half-and-half instead of heavy cream.
- Can be made with shrimp or sausage as a variation.
