Ingredients

  • 2 chicken breasts, sliced thin
  • 2 tablespoons Cajun seasoning
  • 2 tablespoons olive oil
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 12 oz penne pasta
  • Salt and pepper to taste
  • Chopped parsley, for garnish

Instructions

  1. Cook penne pasta according to package directions. Drain and set aside.
  2. Season chicken slices with Cajun seasoning.
  3. In a large skillet, heat olive oil over medium-high heat. Add chicken and cook until browned and cooked through. Remove and set aside.
  4. In the same skillet, add bell peppers and garlic. Sauté for 3-4 minutes until softened.
  5. Reduce heat to medium. Add heavy cream and chicken broth, stirring to combine. Bring to a gentle simmer.
  6. Stir in Parmesan cheese and cooked chicken. Simmer until the sauce thickens slightly, about 3-5 minutes.
  7. Add cooked pasta and toss to coat in the sauce. Season with salt and pepper to taste.
  8. Garnish with chopped parsley before serving.

Notes

  • Adjust the level of Cajun seasoning to control the spice.
  • For a lighter version, use half-and-half instead of heavy cream.
  • Can be made with shrimp or sausage as a variation.
