2 chicken breasts, sliced thin
2 tablespoons Cajun seasoning
2 tablespoons olive oil
1 red bell pepper, sliced
1 yellow bell pepper, sliced
3 cloves garlic, minced
1cup heavy cream
1/2cup chicken broth
1/2cup grated Parmesan cheese
12oz penne pasta
Salt and pepper to taste
Chopped parsley, for garnish
Instructions
Cook penne pasta according to package directions. Drain and set aside.
Season chicken slices with Cajun seasoning.
In a large skillet, heat olive oil over medium-high heat. Add chicken and cook until browned and cooked through. Remove and set aside.
In the same skillet, add bell peppers and garlic. Sauté for 3-4 minutes until softened.
Reduce heat to medium. Add heavy cream and chicken broth, stirring to combine. Bring to a gentle simmer.
Stir in Parmesan cheese and cooked chicken. Simmer until the sauce thickens slightly, about 3-5 minutes.
Add cooked pasta and toss to coat in the sauce. Season with salt and pepper to taste.
Garnish with chopped parsley before serving.
Notes
Adjust the level of Cajun seasoning to control the spice.
For a lighter version, use half-and-half instead of heavy cream.
Can be made with shrimp or sausage as a variation.
