- 2 tablespoons olive oil
- 1 lb chicken breast, cubed
- 1 tablespoon Cajun seasoning
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 carrot, diced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup milk
- 1 cup small pasta (such as elbow macaroni or penne)
- 1 teaspoon dried thyme
- 1/2 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley, chopped for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add the cubed chicken and season with Cajun seasoning. Cook until the chicken is browned and cooked through, about 5-7 minutes. Remove and set aside.
- In the same pot, add the onion, garlic, bell pepper, and carrot. Cook until softened, about 5 minutes.
- Add the chicken broth, heavy cream, milk, and dried thyme. Bring the mixture to a boil.
- Once boiling, add the pasta and cook according to package instructions, about 8-10 minutes, until tender.
- Return the cooked chicken to the pot and stir to combine. Season with paprika, salt, and pepper to taste.
- Simmer for an additional 2-3 minutes to allow the flavors to meld together.
- Garnish with fresh parsley before serving.
Notes
- For a spicier soup, add more Cajun seasoning or a pinch of cayenne pepper.
- If you prefer a thicker soup, you can add a slurry of cornstarch and water.
- Feel free to substitute the pasta with a gluten-free variety if needed.
