Creamy Cajun Chicken Pasta Soup

  • 2 tablespoons olive oil
  • 1 lb chicken breast, cubed
  • 1 tablespoon Cajun seasoning
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 carrot, diced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup milk
  • 1 cup small pasta (such as elbow macaroni or penne)
  • 1 teaspoon dried thyme
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the cubed chicken and season with Cajun seasoning. Cook until the chicken is browned and cooked through, about 5-7 minutes. Remove and set aside.
  2. In the same pot, add the onion, garlic, bell pepper, and carrot. Cook until softened, about 5 minutes.
  3. Add the chicken broth, heavy cream, milk, and dried thyme. Bring the mixture to a boil.
  4. Once boiling, add the pasta and cook according to package instructions, about 8-10 minutes, until tender.
  5. Return the cooked chicken to the pot and stir to combine. Season with paprika, salt, and pepper to taste.
  6. Simmer for an additional 2-3 minutes to allow the flavors to meld together.
  7. Garnish with fresh parsley before serving.

Notes

  • For a spicier soup, add more Cajun seasoning or a pinch of cayenne pepper.
  • If you prefer a thicker soup, you can add a slurry of cornstarch and water.
  • Feel free to substitute the pasta with a gluten-free variety if needed.
