1lb chicken breast, cubed
1 tablespoon Cajun seasoning
1 medium onion, diced
2 cloves garlic, minced
1 bell pepper, diced
1 carrot, diced
4cups chicken broth
1cup heavy cream
1cup milk
1cup small pasta (such as elbow macaroni or penne)
1 teaspoon dried thyme
1/2 teaspoon paprika
Salt and pepper to taste
Fresh parsley, chopped for garnish
Instructions
Heat olive oil in a large pot over medium heat. Add the cubed chicken and season with Cajun seasoning. Cook until the chicken is browned and cooked through, about 5-7 minutes. Remove and set aside.
In the same pot, add the onion, garlic, bell pepper, and carrot. Cook until softened, about 5 minutes.
Add the chicken broth, heavy cream, milk, and dried thyme. Bring the mixture to a boil.
Once boiling, add the pasta and cook according to package instructions, about 8-10 minutes, until tender.
Return the cooked chicken to the pot and stir to combine. Season with paprika, salt, and pepper to taste.
Simmer for an additional 2-3 minutes to allow the flavors to meld together.
Garnish with fresh parsley before serving.
Notes
For a spicier soup, add more Cajun seasoning or a pinch of cayenne pepper.
If you prefer a thicker soup, you can add a slurry of cornstarch and water.
Feel free to substitute the pasta with a gluten-free variety if needed.
