  • 4 cups chicken broth
  • 1 (14.5 oz) can diced tomatoes (with juices)
  • 8 oz penne or rotini pasta
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 teaspoon smoked paprika
  • salt and pepper to taste

Instructions

  1. Prepare the Chicken: Heat olive oil in a large pot or Dutch oven over medium-high heat. Season chicken with Cajun seasoning and add to the pot. Sauté for 5–6 minutes until browned and cooked through. Remove chicken and set aside.
  2. Sauté Vegetables: In the same pot, add diced onion and bell pepper. Cook for 4–5 minutes until softened. Stir in garlic and cook for 1 minute.
  3. Cook the Soup: Add chicken broth and diced tomatoes with their juices. Bring to a boil, then add uncooked pasta. Reduce heat to medium and simmer for 10–12 minutes, stirring occasionally, until pasta is al dente.
  4. Finish the Soup: Return chicken to the pot. Stir in heavy cream, Parmesan cheese, and smoked paprika. Simmer for 2–3 more minutes until creamy and heated through. Season with additional Cajun seasoning, salt, and pepper to taste.
