For the Chicken:

  • 2 boneless, skinless chicken breasts (sliced into strips)
  • 2 teaspoons Cajun seasoning
  • 2 tablespoons olive oil

For the Pasta:

  • 8 oz fettuccine or penne pasta
  • 1 tablespoon butter
  • 3 cloves garlic (minced)
  • 1 red bell pepper (sliced)
  • 1 yellow bell pepper (sliced)
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • Chopped parsley for garnish (optional)

Instructions

  1. Cook the Pasta: Cook the pasta according to package directions until al dente. Drain and set aside.
  2. Cook the Chicken: Season the chicken strips with Cajun seasoning. Cook in a skillet until golden brown and cooked through, about 5–6 minutes. Remove and set aside.
  3. Prepare the Sauce: In the same skillet, sauté garlic and bell peppers. Add cream, Parmesan, paprika, salt, and pepper. Simmer until thickened.
  4. Combine and Serve: Return chicken and pasta to the skillet. Toss to coat in the sauce. Garnish with parsley and serve hot.

Notes

  • For extra heat, add cayenne pepper or extra Cajun seasoning.
  • You can substitute shrimp or sausage for the chicken.
