  • 2 chicken breasts, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper, to taste
  • 12 oz pasta (penne or fettuccine)
  • 1 package (5.2 oz) Boursin garlic and herb cheese
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup reserved pasta water
  • 2 tablespoons chopped parsley (optional, for garnish)

Instructions

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions. Reserve 1/2 cup of pasta water, then drain the rest.
  2. Meanwhile, heat olive oil in a large skillet over medium heat. Add chicken, season with garlic powder, salt, and pepper, and cook until browned and cooked through, about 6-8 minutes.
  3. Reduce the heat to low and add Boursin cheese, heavy cream, and Parmesan to the skillet with the chicken. Stir until the cheese melts and the sauce becomes smooth.
  4. Add the cooked pasta and reserved pasta water to the skillet, tossing everything together until evenly coated and heated through.
  5. Garnish with chopped parsley if desired and serve immediately.

Notes

  • You can substitute Boursin with other creamy cheese spreads if desired.
  • Add spinach or mushrooms for extra vegetables.
  • Use rotisserie chicken for an even faster version.
