2 chicken breasts, cut into bite-sized pieces
2 tablespoons olive oil
1 teaspoon garlic powder
Salt and pepper, to taste
12oz pasta (penne or fettuccine)
1 package (5.2 oz) Boursin garlic and herb cheese
1cup heavy cream
1/2cup grated Parmesan cheese
1/2cup reserved pasta water
2 tablespoons chopped parsley (optional, for garnish)
Instructions
Bring a large pot of salted water to a boil and cook the pasta according to package instructions. Reserve 1/2 cup of pasta water, then drain the rest.
Meanwhile, heat olive oil in a large skillet over medium heat. Add chicken, season with garlic powder, salt, and pepper, and cook until browned and cooked through, about 6-8 minutes.
Reduce the heat to low and add Boursin cheese, heavy cream, and Parmesan to the skillet with the chicken. Stir until the cheese melts and the sauce becomes smooth.
Add the cooked pasta and reserved pasta water to the skillet, tossing everything together until evenly coated and heated through.
Garnish with chopped parsley if desired and serve immediately.
Notes
You can substitute Boursin with other creamy cheese spreads if desired.
Add spinach or mushrooms for extra vegetables.
Use rotisserie chicken for an even faster version.
