For the Cookies:
1/2cup unsalted butter, softened
3oz cream cheese, softened
1cup granulated sugar
1 large egg
1 teaspoon vanilla extract
1/4 teaspoon almond extract (optional)
2 1/4cups all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
Instructions
Cream Together Wet Ingredients: In a large bowl, cream together the softened butter, cream cheese, and sugar until light and fluffy. Beat in the egg, vanilla extract, and almond extract if using.
Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, mixing just until combined.
Chill and Shape: Divide the dough in half, flatten into discs, wrap in plastic, and chill for at least 1 hour.
Bake: Preheat the oven to 375°F (190°C) and line baking sheets with parchment paper. Roll out the dough, cut into shapes, and bake for 8–10 minutes.
Cool and Decorate: Let cool before transferring to a wire rack. Decorate with frosting or sprinkles if desired.
Notes
For a softer cookie, avoid overbaking.
These cookies hold their shape well for cut-out designs.
