Potatoes:
3pounds Yukon Gold or Russet potatoes, peeled and cubed
Cream Cheese Mixture:
4ounces cream cheese, softened
1/2cup sour cream
1/2cup whole milk, warmed
4 tablespoons unsalted butter
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons fresh chives, chopped (optional for garnish)
Instructions
Cook Potatoes: Place the potatoes in a large pot, cover with cold water, add salt, and bring to a boil. Simmer until fork-tender.
Drain and Mash: Drain the potatoes, return to the pot, and mash until mostly smooth.
Add Ingredients: Add cream cheese, sour cream, butter, warm milk, salt, and pepper. Mix until creamy.
