Description

Cranberry Brie Bites are delightful, flaky puff pastry appetizers filled with creamy Brie cheese and tangy cranberry sauce. Perfect for holiday gatherings or any festive occasion, these bite-sized treats combine rich, creamy, and fruity flavors with a golden, crisp pastry exterior. Garnished with fresh rosemary, they offer a beautiful and delicious snack that’s surprisingly easy to make.

Ingredients

Scale

Puff Pastry

  • 1 package of puff pastry (2 sheets, thawed)
  • Flour (for dusting)

Filling

  • 8 ounces of Brie cheese, cut into 24 small pieces
  • 1 cup of cranberry sauce (homemade or store-bought)

Topping

  • 1 egg, beaten (for egg wash)
  • Fresh rosemary leaves (for garnish, optional)

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper and set aside to prepare for baking.
  2. Prepare Puff Pastry: Lightly dust your workspace with flour to prevent sticking. Roll out the thawed puff pastry sheets gently to smooth out any creases, keeping the thickness about 1/8 inch for perfect puffing.
  3. Cut Pastry Squares: Using a sharp knife or pizza cutter, cut each sheet into 4×4 inch squares. You should get approximately 12 squares per sheet, totaling 24 total squares.
  4. Arrange Pastry on Baking Sheet: Place the pastry squares onto the lined baking sheet, spacing them out so they have room to expand while baking.
  5. Add Filling: In the center of each pastry square, place one piece of Brie cheese. Spoon about 1 teaspoon of cranberry sauce on top of the Brie for a perfect balance of creamy and tart flavors.
  6. Fold Pastry Corners: Bring the corners of each pastry square up towards the center, folding over the filling and pinching the corners together tightly to secure the filling inside.
  7. Egg Wash: Brush the tops of the folded pastry bites with the beaten egg. This will give them a beautiful, golden, glossy finish as they bake.
  8. Bake: Place the baking sheet in the preheated oven and bake for 15-20 minutes until the pastry is puffed, flaky, and golden brown.
  9. Cool: Remove the bites from the oven and allow them to cool on the baking sheet for a few minutes, so they set up and are easy to handle.
  10. Garnish and Serve: Transfer the bites to a serving platter, garnish with fresh rosemary leaves if desired, and serve warm for the best flavor and texture.

Notes

  • Ensure puff pastry sheets are fully thawed before rolling to avoid tearing.
  • Use a sharp knife or pizza cutter for clean, even pastry squares.
  • Fresh rosemary adds a lovely aromatic touch but can be omitted if unavailable.
  • For a smoother spread, warm the cranberry sauce slightly before using.
  • These bites are best served warm but can be reheated gently in the oven.
