Main Soup:

  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 small onion, finely diced
  • 1 celery stalk, finely diced
  • 2 garlic cloves, minced
  • 2 tablespoons all-purpose flour
  • 1/4 cup dry white wine
  • 2 1/2 cups seafood or chicken broth
  • 1 cup heavy cream
  • 1/2 cup whole milk
  • 1/2 teaspoon Old Bay seasoning
  • 1/4 teaspoon cayenne pepper (optional)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Seafood:

  • 1/2 lb lump crab meat (picked over for shells)
  • 1/2 lb shrimp, peeled, deveined, and chopped
  • 1 tablespoon chopped fresh parsley
  • juice of 1/2 lemon

Instructions

  1. Sauté Aromatics: In a large pot, heat butter and olive oil. Sauté onion and celery until soft. Add garlic and cook briefly.
  2. Create Roux: Sprinkle in flour, stir for 1–2 minutes to create a roux. Pour in white wine and reduce.
  3. Simmer Soup: Whisk in broth, cream, milk, seasonings. Simmer for 10–12 minutes.
  4. Add Seafood: Add shrimp, cook until pink. Stir in crab meat, simmer until heated through.
  5. Finish: Remove from heat, add lemon juice, garnish with parsley.

Notes

  • For a smoother texture, blend soup before adding seafood.
  • Serve with crusty bread or oyster crackers.
  • For extra richness, stir in sherry just before serving.
