Ingredients

Vegetables:

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced

Spices and Seasonings:

  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • 1/2 teaspoon turmeric
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Additional Ingredients:

  • 1 1/2 cups dried green or brown lentils, rinsed
  • 1 can (14.5 ounces) diced tomatoes
  • 6 cups vegetable broth
  • 2 cups fresh spinach or kale, chopped
  • juice of 1 lemon
  • fresh parsley for garnish

Instructions

  1. Saute Vegetables: Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery, cooking until softened, about 5 minutes.
  2. Add Spices: Stir in garlic, cumin, smoked paprika, thyme, turmeric, salt, and black pepper. Cook until fragrant, about 1 minute.
  3. Cook Lentils: Add lentils, diced tomatoes, and vegetable broth. Bring to a boil, then reduce heat to low and simmer uncovered for 30–35 minutes until lentils are tender.
  4. Finish Soup: Stir in spinach and cook for 2–3 minutes until wilted. Add lemon juice and adjust seasoning to taste.
  5. Serve: Serve hot, garnished with fresh parsley.

Notes

  • For a creamier texture, blend half the soup with an immersion blender and return it to the pot.
  • You can add diced potatoes or sweet potatoes for extra heartiness.
  • This soup freezes well for up to 3 months.
