Cowboy Soup is a hearty and flavorful beef and vegetable soup that is perfect for a comforting meal. Packed with ground beef, beans, corn, and potatoes, this soup is easy to make and incredibly satisfying.

Ground Beef Mixture:

  • 1 pound ground beef
  • 1 small onion, chopped
  • 2 cloves garlic, minced

Soup Base:

  • 3 cups beef broth
  • 1 (15 oz) can diced tomatoes
  • 1 (15 oz) can whole kernel corn, drained
  • 1 (15 oz) can green beans, drained
  • 1 (15 oz) can pinto beans, drained and rinsed
  • 2 cups peeled and diced potatoes

Seasonings:

  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Cook Ground Beef: In a large pot over medium heat, cook the ground beef and onion until browned. Add garlic and cook for 1 minute.
  2. Add Ingredients: Stir in beef broth, tomatoes, corn, green beans, pinto beans, potatoes, chili powder, paprika, salt, and pepper.
  3. Simmer: Bring to a boil, then simmer covered for 25–30 minutes until potatoes are tender.
  4. Adjust Seasoning: Taste and adjust salt and pepper as needed. Serve hot with cornbread or crackers.
