Ground Beef Mixture:

  • 1 pound ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced

Soup Base:

  • 1 (15 oz) can diced tomatoes
  • 1 (15 oz) can corn, drained
  • 1 (15 oz) can pinto beans, drained and rinsed
  • 1 (15 oz) can diced potatoes, drained
  • 1 (10 oz) can diced tomatoes with green chilies
  • 4 cups beef broth
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and black pepper to taste
  • Optional: 1 cup frozen green beans or carrots

Instructions

  1. Brown Ground Beef: In a large pot or Dutch oven, brown the ground beef over medium heat until no longer pink. Drain excess fat.
  2. Sauté Onion and Garlic: Add diced onion and garlic, and sauté for 2–3 minutes until softened.
  3. Add Ingredients: Stir in diced tomatoes, corn, pinto beans, diced potatoes, tomatoes with green chilies, and beef broth. Season with chili powder, cumin, salt, and pepper.
  4. Simmer: Bring to a boil, then reduce heat and let simmer uncovered for 25–30 minutes, stirring occasionally. Add extra frozen vegetables in the last 10 minutes of cooking if using.
  5. Serve: Serve hot with cornbread or crackers.

  • For a spicier version, add a pinch of cayenne or extra green chilies.
  • You can substitute fresh diced potatoes if preferred—just simmer longer until tender.
