This Cowboy Potato Casserole is a hearty and comforting dish that combines crispy bacon, flavorful ground beef, creamy sour cream, and gooey cheddar cheese, all baked together with frozen hash brown potatoes for a delicious Tex-Mex inspired meal.

Bacon and Beef Mixture:

  • 6 slices bacon, chopped
  • 1 lb ground beef
  • 1 medium onion, diced
  • 1 packet (1 ounce) taco seasoning
  • 1/2 cup sour cream
  • 1 can (10.5 ounces) cream of mushroom soup
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper

Additional Ingredients:

  • 1 (32-ounce) bag frozen diced hash brown potatoes
  • 2 cups shredded cheddar cheese, divided
  • 1/4 cup chopped green onions (optional)

Instructions

  1. Preheat oven: Preheat oven to 350°F (175°C).
  2. Cook Bacon: In a large skillet over medium heat, cook bacon until crispy. Remove and set aside.
  3. Cook Beef Mixture: Cook ground beef and onion in the skillet until beef is browned. Drain excess grease. Stir in taco seasoning, sour cream, cream of mushroom soup, garlic powder, and pepper.
  4. Combine Ingredients: In a mixing bowl, combine hash browns, beef mixture, half of the bacon, and 1 1/2 cups cheddar cheese. Transfer to a baking dish.
  5. Bake: Sprinkle remaining cheddar cheese and bacon on top. Bake for 35–40 minutes.
  6. Serve: Garnish with green onions if desired and serve.

Notes

  • You can substitute ground sausage or turkey for the beef.
  • Great with salsa or guacamole on the side.
