1pound ground beef
1/2pound ground sausage (optional)
1 small onion, diced
1 red bell pepper, diced
2 cloves garlic, minced
1 (15 oz) can black beans, drained and rinsed
1 (15 oz) can corn, drained
1 (10 oz) can diced tomatoes with green chilies, undrained
1cup shredded cheddar cheese
1 tablespoon chili powder
1 teaspoon cumin
Salt and pepper, to taste
Cornbread Topping:
1 (8.5 oz) box cornbread mix (such as Jiffy)
1 egg
1/3cup milk
Instructions
Preheat the oven: Preheat the oven to 375°F (190°C).
Prepare the filling: Stir in black beans, corn, diced tomatoes with chilies, chili powder, cumin, salt, and pepper. Simmer for 5 minutes. Remove from heat and stir in half the cheddar cheese.
Assemble: Pour the mixture into a greased 9×13-inch baking dish.
Make the cornbread: In a medium bowl, prepare the cornbread mix with egg and milk. Spread the batter over the filling.
Bake: Sprinkle remaining cheddar cheese on top. Bake for 25–30 minutes until golden and cooked through. Let rest before serving.
Notes
For added heat, mix diced jalapeños into the filling or top with hot sauce.
This casserole can be made ahead and reheated for even better flavor the next day.
