  • 1 pound ground beef
  • 1/2 pound ground sausage (optional)
  • 1 small onion, diced
  • 1 red bell pepper, diced
  • 2 cloves garlic, minced
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (15 oz) can corn, drained
  • 1 (10 oz) can diced tomatoes with green chilies, undrained
  • 1 cup shredded cheddar cheese
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper, to taste
  • Cornbread Topping:

  • 1 (8.5 oz) box cornbread mix (such as Jiffy)
  • 1 egg
  • 1/3 cup milk

Instructions

  1. Preheat the oven: Preheat the oven to 375°F (190°C).
  2. Cook the meat: In a large skillet over medium heat, cook the ground beef (and sausage if using) until browned. Add onion, bell pepper, and garlic. Sauté until softened.
  3. Prepare the filling: Stir in black beans, corn, diced tomatoes with chilies, chili powder, cumin, salt, and pepper. Simmer for 5 minutes. Remove from heat and stir in half the cheddar cheese.
  4. Assemble: Pour the mixture into a greased 9×13-inch baking dish.
  5. Make the cornbread: In a medium bowl, prepare the cornbread mix with egg and milk. Spread the batter over the filling.
  6. Bake: Sprinkle remaining cheddar cheese on top. Bake for 25–30 minutes until golden and cooked through. Let rest before serving.
