Instructions

  1. Preheat the Oven: Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Cream Butter and Sugars: In a large mixing bowl, cream together softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add Eggs and Vanilla: Beat in eggs one at a time, then stir in the vanilla extract.
  4. Combine Dry Ingredients: In a separate bowl, whisk together flour, baking soda, baking powder, salt, and cinnamon.
  5. Combine Wet and Dry Mixtures: Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Add Mix-Ins: Stir in oats, chocolate chips, coconut, and nuts if using.
  7. Bake: Drop rounded tablespoons of dough onto prepared baking sheets, spacing about 2 inches apart. Bake for 10–12 minutes or until edges are golden and centers are set.
  8. Cool: Let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
