Steak Sliders:

  • 1 1/2 lbs ribeye or sirloin steak (thinly sliced)
  • Salt and black pepper to taste
  • 1 tablespoon olive oil
  • 12 slider buns or Hawaiian rolls
  • 6 slices provolone or cheddar cheese (halved)
  • 2 tablespoons mayonnaise (optional)

Cowboy Butter:

  • 1/2 cup unsalted butter (softened)
  • 2 cloves garlic (minced)
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1 tablespoon chopped fresh parsley
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon crushed red pepper flakes
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Cowboy Butter: In a bowl, mix all cowboy butter ingredients until well combined; set aside.
  2. Steak Preparation: Season steak slices with salt and pepper. Sear in batches in a skillet with olive oil until browned and cooked to desired doneness. Toss hot steak in cowboy butter.
  3. Assemble Sliders: Preheat oven. Slice buns, place bottoms in a dish, spread mayo (optional), layer steak and cheese, top with buns. Bake covered, then uncover to toast tops.
