Steak Sliders:
1 1/2lbs ribeye or sirloin steak (thinly sliced)
Salt and black pepper to taste
1 tablespoon olive oil
12 slider buns or Hawaiian rolls
6 slices provolone or cheddar cheese (halved)
2 tablespoons mayonnaise (optional)
Cowboy Butter:
1/2cup unsalted butter (softened)
2 cloves garlic (minced)
1 tablespoon Dijon mustard
1 tablespoon lemon juice
1 tablespoon chopped fresh parsley
1/2 teaspoon paprika
1/4 teaspoon cayenne pepper
1/4 teaspoon crushed red pepper flakes
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
Cowboy Butter: In a bowl, mix all cowboy butter ingredients until well combined; set aside.
Steak Preparation: Season steak slices with salt and pepper. Sear in batches in a skillet with olive oil until browned and cooked to desired doneness. Toss hot steak in cowboy butter.
Assemble Sliders: Preheat oven. Slice buns, place bottoms in a dish, spread mayo (optional), layer steak and cheese, top with buns. Bake covered, then uncover to toast tops.
Serve: Serve warm and enjoy!

You can make the cowboy butter in advance and store in the fridge.
