  • 12 oz linguine

Chicken:

  • 1 1/2 pounds boneless skinless chicken breasts (cut into strips)
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil

Cowboy Butter Sauce:

  • 1/2 cup unsalted butter
  • 4 garlic cloves (minced)
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon paprika
  • 1/4 teaspoon crushed red pepper flakes
  • 1 tablespoon lemon juice
  • 2 tablespoons chopped fresh parsley
  • 1/4 cup grated Parmesan cheese (optional)

Instructions

  1. Cook Linguine: Cook linguine in salted boiling water, then drain and set aside, reserving 1/2 cup of pasta water.
  2. Cook Chicken: Season and cook chicken strips until golden and cooked through. Set aside.
  3. Prepare Cowboy Butter Sauce: Melt butter in a skillet, add garlic, Dijon mustard, paprika, red pepper flakes, and lemon juice. Cook until fragrant.
  4. Combine: Return chicken to the skillet, add linguine, toss in the sauce. Add reserved pasta water if needed for creaminess.
  5. Finish and Serve: Stir in parsley, sprinkle with Parmesan cheese if desired, and serve hot.
