Roasted Garlic:

  • 2 heads garlic, cloves separated and peeled
  • 2 tbsp olive oil

Soup:

  • 1 medium yellow onion, thinly sliced
  • 4 cups low-sodium chicken or vegetable broth
  • 1 cup water
  • 1 bay leaf
  • 1 tsp fresh thyme leaves (or 1/2 tsp dried)
  • Salt and black pepper, to taste

For Serving:

  • 2 egg yolks
  • 1 tbsp red wine vinegar
  • 4 slices crusty French bread, toasted
  • 1/2 cup grated Gruyère or Parmesan cheese

Instructions

  1. Roast Garlic: Preheat the oven to 375°F (190°C). Roast garlic cloves drizzled with olive oil in foil for 30–35 minutes until soft.
  2. Caramelize Onions: Cook sliced onion in olive oil until caramelized. Add roasted garlic, broth, water, herbs, salt, and pepper. Simmer for 20 minutes.
  3. Temper Yolks: Whisk egg yolks with vinegar. Add hot soup gradually, then return to pot and simmer briefly.
  4. Serve: Place toast in bowls, ladle soup, and top with cheese. Serve hot.

Notes

  • For a vegetarian version, use vegetable broth and Parmesan cheese.
  • You can broil the bowls briefly to melt and brown the cheese on top for a gratin-style presentation.
