Ingredients

For the Cookies:

1 cup unsalted butter, softened;
1 cup granulated sugar;
1/2 cup brown sugar;
2 large eggs;
2 teaspoons vanilla extract;
1 1/2 cups all-purpose flour;
1/2 cup unsweetened cocoa powder;
1 teaspoon baking soda;
1/2 teaspoon baking powder;
1/2 teaspoon salt;
1 cup semisweet chocolate chips;
1 cup mini rainbow chocolate candies (similar to Cosmic Brownie toppings);

For the Ganache:

1 cup semisweet chocolate chips;
1/2 cup heavy cream;
1 tablespoon butter

Instructions

  1. Preheat oven and prepare baking sheets: Preheat oven to 350°F and line baking sheets with parchment paper.
  2. Cream butter and sugars: In a large bowl, cream butter, granulated sugar, and brown sugar until light and fluffy. Beat in eggs one at a time, then add vanilla.
  3. Mix dry ingredients: In another bowl, whisk together flour, cocoa powder, baking soda, baking powder, and salt. Gradually mix dry ingredients into the wet mixture until combined.
  4. Add chocolate chips and bake: Fold in chocolate chips. Scoop dough onto baking sheets in tablespoon-sized portions. Bake for 9–11 minutes until edges are set. Cool completely.
  5. Make ganache and assemble: For the ganache, heat heavy cream until steaming and pour over chocolate chips. Let sit 2 minutes, then stir until smooth and add butter. Spread ganache over cooled cookies and top with mini rainbow chocolate candies. Let set before serving.

Notes

  • Chill dough for 30 minutes for thicker cookies.
  • Use dark cocoa powder for a richer flavor.
  • You can substitute mini M&Ms if you don’t have rainbow chocolate candies.
