1cup cornmeal
1cup all-purpose flour
1 tablespoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 tablespoons sugar
2 large eggs
1 1/4cups buttermilk
1/4cup melted butter
1/4cup vegetable oil
Nonstick cooking spray
Syrup:
1/2cup butter
1/3cup honey
1/4cup maple syrup
Instructions
Preheat Waffle Maker: Preheat a mini waffle maker and spray with nonstick cooking spray.
Mix Dry Ingredients: In a large bowl, whisk together cornmeal, flour, baking powder, baking soda, salt, and sugar.
Combine Wet Ingredients: In another bowl, whisk eggs, buttermilk, melted butter, and oil until smooth.
Mix Batter: Pour the wet ingredients into the dry and stir just until combined.
Cook Waffles: Spoon batter into the waffle maker and cook until golden brown and crisp, about 3–4 minutes. Repeat until all batter is used.
Prepare Syrup: For the syrup, melt butter in a small saucepan over low heat. Stir in honey and maple syrup and heat until warmed through.
