Corn Ribs

Corn ribs are a fun and flavorful way to enjoy corn on the cob, sliced into rib-like strips, seasoned, and baked or air-fried until crispy and caramelized.

  • 4 ears of corn, husked
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and black pepper, to taste
  • Fresh lime wedges, for serving
  • Chopped parsley or cilantro, for garnish (optional)

Instructions

  1. Preheat your oven or air fryer to 400°F (200°C).
  2. Cut each ear of corn into quarters lengthwise to create rib-like strips. Use a sharp knife and be careful during this step.
  3. In a large bowl, mix olive oil with smoked paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper.
  4. Toss the corn ribs in the seasoned oil mixture until well coated.
  5. Place the corn ribs in a single layer on a baking sheet lined with parchment paper or in the air fryer basket.
  6. Bake or air fry for 15-20 minutes, flipping halfway through, until the corn is slightly charred and curled.
  7. Remove from oven or air fryer and garnish with lime juice and chopped parsley or cilantro if desired.
  8. Serve hot and enjoy!

  • Be cautious when cutting the corn; it’s tough and can be slippery.
  • Use a mix of spices to customize the flavor profile to your liking.
