  • 2 cups canned corn, drained
  • 8 oz cream cheese, softened
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup chopped green onions
  • 1/2 cup diced red bell pepper
  • 1/4 cup mayonnaise
  • 1/4 cup chopped fresh cilantro
  • 1 tsp garlic powder
  • 1 tsp cumin
  • Salt and pepper to taste

Instructions

  1. Preheat Oven: Preheat the oven to 350°F (175°C).
  2. Mix Ingredients: In a mixing bowl, combine the canned corn, cream cheese, sour cream, cheddar cheese, green onions, red bell pepper, mayonnaise, cilantro, garlic powder, cumin, salt, and pepper.
  3. Bake: Transfer the mixture to a baking dish and bake for 25-30 minutes, until the dip is bubbly and golden on top.
  4. Serve: Remove from the oven and let it cool slightly. Garnish with additional chopped cilantro and serve with tortilla chips or crackers.
