  • 1 teaspoon vanilla extract
  • 1/3 cup unsweetened cocoa powder
  • 3/4 cup all-purpose flour
  • 1/4 teaspoon salt
  • 8 chocolate sandwich cookies, crushed

Cream Cheese Swirl:

  • 4 ounces cream cheese, softened
  • 2 tablespoons powdered sugar

Instructions

  1. Preheat and Prepare: Preheat the oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. Mix Butter and Sugar: In a large bowl, whisk melted butter and sugar. Add eggs, food coloring, and vanilla; mix until smooth.
  3. Add Dry Ingredients: Sift in cocoa powder, then stir in flour and salt until just combined. Fold in half of the crushed cookies.
  4. Layer Batter: Spread batter in the pan.
  5. Prepare Cream Cheese Swirl: Mix cream cheese and powdered sugar until smooth. Drop spoonfuls over batter and swirl. Sprinkle remaining cookies.
  6. Bake: Bake for 25–30 minutes. Cool before slicing.
