1/2cup packed light brown sugar
2 large eggs

18 chocolate sandwich cookies (like Oreos), coarsely chopped
1cup white chocolate chips
Instructions
Preheat the oven: Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
Cream butter and sugars: In a large bowl, cream the softened butter, granulated sugar, and brown sugar until light and fluffy.
Add eggs and vanilla: Beat in the eggs one at a time, then mix in the vanilla extract.
Combine dry ingredients: In a separate bowl, whisk together the flour, baking soda, and salt.
Mix wet and dry: Gradually add the dry ingredients to the wet ingredients and mix until just combined.
Add mix-ins: Gently fold in the chopped sandwich cookies and white chocolate chips.
Bake: Scoop tablespoon-sized portions of dough onto the prepared baking sheets, spacing them about 2 inches apart. Bake for 10–12 minutes, or until the edges are lightly golden and the centers are still soft.

Notes
For extra flavor and crunch, reserve a few chopped cookies and white chocolate chips to press into the tops of the cookies before baking.
