Description

A keto-friendly, gluten-free, and dairy-free version of the classic Oh Henry! chocolate bar, enriched with collagen and protein for a healthier twist.

Ingredients

Units Scale
  • 1 cup sugar-free peanut butter
  • 1/2 cup collagen peptides
  • 1/4 cup unsweetened almond milk
  • 1/4 cup coconut oil
  • 1/4 cup sugar-free chocolate chips
  • 2 tablespoons sugar-free sweetener (like stevia or monk fruit)
  • 1/4 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/4 cup chopped peanuts (for filling)
  • 1/2 cup sugar-free dark chocolate (for coating)

Instructions

  1. In a medium bowl, mix together peanut butter, collagen peptides, almond milk, and coconut oil until smooth.
  2. Stir in the sweetener, vanilla extract, and salt. Once combined, fold in the chopped peanuts.
  3. Spread the mixture evenly into a lined baking dish, pressing it down to form a uniform layer.
  4. In a separate microwave-safe bowl, melt the sugar-free dark chocolate, stirring every 20 seconds until fully melted and smooth.
  5. Pour the melted chocolate over the peanut butter mixture, smoothing it out with a spatula.
  6. Refrigerate for at least 1 hour or until the bars are set.
  7. Once set, cut the mixture into bars and store them in an airtight container in the fridge.

Notes

  • For a richer flavor, you can use sugar-free milk chocolate instead of dark chocolate.
  • Make sure the peanut butter is unsweetened to keep it keto-friendly.
  • Feel free to adjust the sweetness level based on your preference with the sweetener.
  • These bars can be stored in the fridge for up to a week for best freshness.
