These Coffee Cake Muffins are a delightful treat that combines the flavors of a classic coffee cake in a convenient, handheld muffin form. With a tender crumb, a sweet streusel topping, and optional glaze, these muffins are perfect for breakfast or as a snack with your favorite cup of coffee.

Ingredients

For the Muffins:

1 3/4 cups all-purpose flour, 1/2 cup granulated sugar, 1/4 cup light brown sugar (packed), 2 teaspoons baking powder, 1/2 teaspoon baking soda, 1/2 teaspoon salt, 1 teaspoon ground cinnamon, 2/3 cup sour cream, 1/2 cup whole milk, 2 large eggs, 1/2 cup unsalted butter (melted and slightly cooled), 1 1/2 teaspoons vanilla extract

For the Streusel Topping:

1/2 cup all-purpose flour, 1/2 cup light brown sugar, 1 teaspoon ground cinnamon, 1/4 teaspoon salt, 4 tablespoons unsalted butter (melted)

For the Glaze (optional):

1/2 cup powdered sugar, 1-2 tablespoons milk, 1/2 teaspoon vanilla extract

Instructions

  1. Preheat oven to 375°F: Line a 12-cup muffin tin with paper liners or grease it lightly.
  2. Make the Streusel Topping: Mix flour, brown sugar, cinnamon, and salt in a medium bowl. Stir in melted butter until crumbly.
  3. Prepare the Muffin Batter: Whisk together dry ingredients in a large bowl. In a separate bowl, whisk together wet ingredients. Combine wet and dry ingredients just until mixed.
  4. Fill the Muffin Cups: Divide batter evenly, sprinkle streusel topping, and bake for 18–22 minutes.
  5. Optional Glaze: Whisk powdered sugar, milk, and vanilla. Drizzle over cooled muffins.

Notes

  • You can use Greek yogurt instead of sour cream for the muffins.
  • For added texture, consider adding chopped pecans or walnuts to the streusel.
  • These muffins freeze well; thaw and warm before serving.
