Ingredients:

  • 1 cup red lentils, rinsed
  • 1 tablespoon coconut oil
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon chili powder
  • 1 (14-ounce) can coconut milk
  • 2 cups vegetable broth
  • 1 (14-ounce) can diced tomatoes
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • juice of 1/2 lemon
  • fresh cilantro for garnish

Instructions

  1. In a large pot, heat the coconut oil over medium heat. Add the onion and sauté for 5 minutes until soft and translucent.
  2. Stir in the garlic and ginger and cook for 1 minute until fragrant.
  3. Add the turmeric, cumin, coriander, and chili powder, stirring for 30 seconds to toast the spices.
  4. Add the red lentils, coconut milk, vegetable broth, and diced tomatoes. Bring to a boil, then reduce heat to low and simmer uncovered for 25 to 30 minutes, stirring occasionally, until the lentils are soft and the dahl has thickened.
  5. Stir in the salt, black pepper, and lemon juice. Adjust seasoning to taste.
  6. Serve warm, garnished with fresh cilantro.

Notes

  • For a creamier dahl, blend a portion of the mixture with an immersion blender and stir back in.
  • Serve with rice or naan for a complete meal.
