These Coconut Chicken Meatballs are a flavorful twist on traditional meatballs, cooked in a creamy coconut curry sauce. Served over jasmine rice, they make a delicious and satisfying meal!

  • 1 pound ground chicken
  • 1/4 cup panko breadcrumbs
  • 1 egg
  • 2 tablespoons green onions (finely chopped)
  • 1 tablespoon fresh ginger (grated)
  • 2 cloves garlic (minced)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

For the Coconut Curry Sauce:

  • 1 tablespoon olive oil
  • 1 can (14 oz) coconut milk
  • 1 tablespoon red curry paste
  • 1 tablespoon fish sauce
  • 1 tablespoon lime juice
  • 1 teaspoon brown sugar

For Serving:

  • Fresh cilantro for garnish
  • Cooked jasmine rice

Instructions

  1. Prepare the Meatballs: In a large bowl, combine ground chicken, panko breadcrumbs, egg, green onions, ginger, garlic, salt, and pepper. Form into 1-inch meatballs.
  2. Cook the Meatballs: Brown meatballs in olive oil in a skillet. Remove and set aside.
  3. Make the Sauce: In the same skillet, combine coconut milk, red curry paste, fish sauce, lime juice, and brown sugar. Simmer, then return meatballs to the skillet.
  4. Finish and Serve: Cover and cook until meatballs are done and sauce thickens. Garnish with cilantro and serve over jasmine rice.

Notes

  • Adjust red curry paste for preferred heat level.
  • Ground turkey can be used as a substitute.
  • Add spinach or bell peppers to the sauce for extra vegetables.
