Description

This Club Sandwich Pasta Salad is a delightful twist on the classic club sandwich, combining rotini pasta with diced turkey, crispy bacon, fresh vegetables, and a creamy mayo-mustard dressing. It’s a hearty, flavorful salad perfect for casual lunches or potlucks, offering the familiar taste of a club sandwich in a refreshing, easy-to-make pasta salad.

Ingredients

Scale

Pasta

  • 8 oz (about 225 g) rotini pasta

Protein

  • 1 cup (about 150 g) diced turkey
  • 6 slices crispy bacon, cooked and crumbled

Vegetables & Cheese

  • 1 cup cherry tomatoes, halved
  • 2 cups shredded lettuce
  • 1 cup shredded cheddar cheese

Dressing

  • 1/2 cup mayonnaise
  • 2 tablespoons mustard
  • Salt and pepper, to taste

Instructions

  1. Cook Pasta: Bring a pot of salted water to a boil and cook the rotini pasta until al dente, about 8 to 10 minutes. Drain the pasta and rinse under cold water to stop cooking and cool it down.
  2. Prepare Vegetables: While the pasta cooks, halve the cherry tomatoes and shred the lettuce to get them ready for mixing.
  3. Combine Ingredients: In a large mixing bowl, mix together the cooled rotini pasta, diced turkey, crumbled crispy bacon, halved cherry tomatoes, shredded lettuce, and shredded cheddar cheese.
  4. Make Dressing: In a small bowl, whisk together the mayonnaise and mustard until smooth and creamy. Season with salt and pepper to taste.
  5. Toss Salad and Chill: Pour the dressing over the pasta mixture and toss gently to coat all ingredients evenly. Cover the bowl and refrigerate for at least 30 minutes to allow flavors to meld before serving.

Notes

  • For best results, use freshly cooked and cooled pasta to prevent sogginess.
  • You can substitute turkey with chicken or ham if preferred.
  • Adding a dash of lemon juice to the dressing can enhance freshness.
  • Keep the salad refrigerated until serving to maintain crispness of the lettuce.
  • Great served chilled and can be prepared a few hours in advance for convenience.
