  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 can (28 oz) crushed tomatoes
  • 2 cups vegetable broth
  • 1 teaspoon sugar
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/2 cup heavy cream or whole milk (optional)
  • fresh basil or parsley for garnish

Instructions

  1. Heat the olive oil: In a large pot over medium heat, add olive oil. Sauté the chopped onion until softened.
  2. Add aromatics: Stir in minced garlic and cook for 30 seconds. Add tomato paste and cook for 1 minute.
  3. Cook the soup: Pour in crushed tomatoes and vegetable broth. Season with sugar, basil, oregano, salt, and pepper. Simmer for 20–25 minutes.
  4. Blend the soup: Use an immersion blender or transfer to a blender to purée until smooth.
  5. Finish the soup: Stir in cream or milk (if using) and heat through. Serve hot, garnished with fresh herbs.
