Dough:
1cup unsalted butter (softened)
1cup granulated sugar
1 large egg
1 1/2 teaspoons vanilla extract
2 3/4cups all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
Instructions
Cream Butter and Sugar: In a large mixing bowl, cream the butter and sugar together until light and fluffy, about 2–3 minutes.
Add Egg and Vanilla: Beat in the egg and vanilla extract until well combined.
Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, and salt.
Form Dough: Gradually add the dry ingredients to the wet mixture, mixing until a dough forms. Divide the dough in half, shape into discs, wrap in plastic wrap, and chill for at least 1 hour.
Roll and Cut: Preheat the oven to 350°F. Roll out one disc of dough at a time to 1/4-inch thickness. Cut into desired shapes using cookie cutters and transfer to prepared baking sheets.
Bake and Cool: Bake for 8–10 minutes until edges are starting to turn golden. Cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.
