  • 1/2 cup unsalted butter
  • 2 cups granulated sugar
  • 1/2 cup milk
  • 1/4 cup unsweetened cocoa powder
  • 1/2 cup creamy peanut butter
  • 2 teaspoons vanilla extract
  • 3 cups quick-cooking oats
  • 1/4 teaspoon salt

Instructions

  1. In a medium saucepan over medium heat, combine the butter, sugar, milk, and cocoa powder. Stir frequently until the mixture comes to a rolling boil.
  2. Boil for 1 minute, then immediately remove from heat.
  3. Stir in the peanut butter, vanilla extract, and salt until smooth.
  4. Add the oats and mix until fully coated.
  5. Drop heaping tablespoons of the mixture onto parchment or wax paper.
  6. Let the cookies cool and set at room temperature for about 30 minutes or until firm.

Notes

  • For added texture, mix in 1/4 cup chopped nuts or shredded coconut.
