Boiling and Coating:

  • 1/3 cup baking soda
  • 6 cups water (for boiling)
  • 1/2 cup granulated sugar
  • 1 tablespoon ground cinnamon
  • 4 tablespoons unsalted butter, melted (for coating)

Instructions

  1. Making the Dough: In a large bowl, combine warm water, yeast, and 1 tablespoon sugar. Let sit for 5 minutes until foamy. Stir in flour, salt, and 2 tablespoons melted butter. Mix and knead until a smooth dough forms, about 5–7 minutes. Cover and let rise in a warm place for 1 hour, or until doubled in size.
  2. Boiling and Baking: Preheat the oven to 425°F (220°C) and line two baking sheets with parchment paper. In a large pot, bring 6 cups of water and baking soda to a boil. Punch down the dough and divide it into 6 equal pieces. Roll each piece into a rope about 12–15 inches long, then cut into 1-inch bites. In batches, drop the bites into the boiling baking soda water for 20–30 seconds. Remove with a slotted spoon and place on the prepared baking sheets. Bake for 10–12 minutes, or until golden brown.
  3. Coating and Serving: While still warm, toss the pretzel bites in the 4 tablespoons melted butter, then coat in a mixture of the ½ cup sugar and 1 tablespoon cinnamon. Serve warm.
