  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 cup milk
  • 1/3 cup sour cream or plain Greek yogurt
  • 1/3 cup vegetable oil
  • 1 teaspoon vanilla extract

For the Cinnamon Swirl:

  • 1/3 cup brown sugar (packed)
  • 1 tablespoon ground cinnamon
  • 2 tablespoons melted butter

For the Glaze:

  • 1/2 cup powdered sugar
  • 12 tablespoons milk
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and grease/flour a 9×5-inch loaf pan.
  2. Mix dry ingredients: In a large bowl, whisk flour, baking powder, salt, and sugar together.
  3. Combine wet ingredients: In another bowl, mix egg, milk, sour cream, oil, and vanilla.
  4. Combine wet and dry: Add wet ingredients to dry, mix until just combined.
  5. Layer batter: Pour half of the batter into pan.
  6. Add cinnamon swirl: Mix brown sugar, cinnamon, butter; swirl over batter.
  7. Repeat layers: Add remaining batter, top with rest of cinnamon swirl.
  8. Bake: Bake for 45–55 minutes until a toothpick comes out clean.
  9. Cool and glaze: Cool in pan, then drizzle with glaze.

Notes

  • For a richer version, add chopped pecans or mini chocolate chips.
  • This bread freezes well—wrap tightly and freeze for up to 2 months.
