1 large egg yolk

Instructions
Preheat the Oven: Preheat the oven to 350°F and line baking sheets with parchment paper.
Cream Butter and Sugar: In a large mixing bowl, cream the butter and sugar until light and fluffy, about 2–3 minutes.
Combine Wet Ingredients: Beat in the eggnog, egg yolk, and vanilla extract until smooth.
Mix Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, salt, cinnamon, and nutmeg.
Combine and Bake: Gradually add the dry ingredients to the wet ingredients and mix until just combined. Drop rounded tablespoons of dough onto the prepared baking sheets, sprinkle with cinnamon sugar, and bake for 10–12 minutes until lightly golden.
Cool and Serve: Let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
