For the Cookies:
4oz cream cheese, softened
1/2cup unsalted butter, softened
3/4cup granulated sugar
1 large egg yolk
1 tsp vanilla extract
1 1/4cups all-purpose flour
1/4 tsp salt
1/2 tsp ground cinnamon
1/4 tsp baking powder
For Coating:
1/4cup granulated sugar
1 tsp ground cinnamon
Instructions
In a large mixing bowl, beat the cream cheese and butter together until smooth and creamy.
Add the sugar and beat until light and fluffy.
Mix in the egg yolk and vanilla extract until well combined.
In a separate bowl, whisk together the flour, salt, cinnamon, and baking powder.
Gradually add the dry ingredients to the wet mixture and mix until a soft dough forms.
Cover the dough and refrigerate for at least 1 hour.
Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a small bowl, mix 1/4 cup sugar with 1 teaspoon cinnamon.
Scoop tablespoon-sized portions of dough, roll into balls, and coat each one in the cinnamon sugar.
Place on the baking sheet 2 inches apart.
Bake for 10–12 minutes or until edges are set and bottoms are lightly golden.
Let cool on the pan for a few minutes before transferring to a wire rack to cool completely.
Notes
For extra spice, add a pinch of nutmeg to the dough.
Cookies can be stored in an airtight container at room temperature for up to 5 days or frozen for longer storage.
