2 tbsp brown sugar
1 tbsp granulated sugar
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 1/2 tsp ground cinnamon
Wet Ingredients:
1 1/4cups whole milk
1 large egg
3 tbsp unsalted butter, melted
1 tsp vanilla extract

Instructions
Dry Ingredients: In a large bowl, whisk together flour, brown sugar, granulated sugar, baking powder, baking soda, salt, and cinnamon.
Wet Ingredients: In another bowl, whisk milk, egg, melted butter, and vanilla until smooth. Pour wet ingredients into dry ingredients and stir gently until just combined; do not overmix.
Cooking: Heat a nonstick skillet or griddle over medium heat and lightly grease with butter or oil. Pour 1/4 cup of batter per pancake onto the skillet. Cook for 2–3 minutes until bubbles form on the surface, then flip and cook another 1–2 minutes until golden and cooked through.
Serving: Serve warm with maple syrup.
Notes
For extra flavor, swirl 1 tablespoon of cinnamon sugar into each pancake before flipping.
You can also top with whipped cream and caramel sauce for a dessert-style breakfast.
