Main Bread:

  • 2 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1 cup buttermilk
  • 1/3 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract

For the cinnamon swirl:

  • 1/3 cup granulated sugar
  • 1 tablespoon ground cinnamon

For the glaze (optional):

  • 1/2 cup powdered sugar
  • 12 tablespoons milk
  • 1/4 teaspoon vanilla extract

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. Mix dry ingredients: In a large bowl, whisk together flour, baking powder, baking soda, salt, sugar, and cinnamon.
  3. Combine wet ingredients: In a separate bowl, whisk together buttermilk, oil, eggs, and vanilla until smooth.
  4. Blend wet and dry: Pour the wet ingredients into the dry and stir just until combined—do not overmix.
  5. Prepare the swirl: In a small bowl, mix the cinnamon swirl sugar and cinnamon.
  6. Layer and swirl: Pour half the batter into the pan, sprinkle half the swirl mixture, add the remaining batter, top with the rest of the swirl, and gently swirl through with a knife.
  7. Bake: Bake for 45–55 minutes until a toothpick comes out clean. Cool in the pan, then transfer to a rack.
  8. Optional glaze: Whisk together powdered sugar, milk, and vanilla, and drizzle over the cooled bread.

Notes

  • To make buttermilk, combine 1 cup milk with 1 tablespoon lemon juice or vinegar and let sit for 5 minutes.
