6 boneless, skinless chicken thighs
1/4cup fresh lime juice (about 2 limes)
2 tablespoons olive oil
3 cloves garlic, minced
1/2cup chopped fresh cilantro
1 teaspoon ground cumin
1/2 teaspoon chili powder
1/2 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
In a bowl, whisk together lime juice, olive oil, garlic, cilantro, cumin, chili powder, paprika, salt, and pepper.
Place chicken thighs in a large resealable bag or shallow dish and pour the marinade over them. Seal or cover and marinate in the refrigerator for at least 30 minutes, preferably 2-4 hours.
Preheat grill or skillet over medium-high heat.
Remove chicken from the marinade and let excess drip off. Discard the marinade.
Cook chicken thighs for 5-7 minutes per side, or until internal temperature reaches 165°F (74°C) and chicken is nicely charred and cooked through.
Let rest for a few minutes before serving. Garnish with extra cilantro and lime wedges if desired.
Notes
For best flavor, marinate the chicken overnight.
Can also be baked at 400°F (200°C) for 25-30 minutes if preferred.
Pairs well with rice, tortillas, or a fresh salad.
