Cilantro Lime Chicken Thighs Recipe

Juicy and flavorful cilantro lime chicken thighs marinated in a zesty blend of fresh cilantro, lime juice, garlic, and spices, then grilled or pan-seared to perfection.

  • 6 boneless, skinless chicken thighs
  • 1/4 cup fresh lime juice (about 2 limes)
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/2 cup chopped fresh cilantro
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. In a bowl, whisk together lime juice, olive oil, garlic, cilantro, cumin, chili powder, paprika, salt, and pepper.
  2. Place chicken thighs in a large resealable bag or shallow dish and pour the marinade over them. Seal or cover and marinate in the refrigerator for at least 30 minutes, preferably 2-4 hours.
  3. Preheat grill or skillet over medium-high heat.
  4. Remove chicken from the marinade and let excess drip off. Discard the marinade.
  5. Cook chicken thighs for 5-7 minutes per side, or until internal temperature reaches 165°F (74°C) and chicken is nicely charred and cooked through.
  6. Let rest for a few minutes before serving. Garnish with extra cilantro and lime wedges if desired.

Notes

  • For best flavor, marinate the chicken overnight.
  • Can also be baked at 400°F (200°C) for 25-30 minutes if preferred.
  • Pairs well with rice, tortillas, or a fresh salad.
