  • 1/4 cup fresh cilantro, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

For the Peach Salsa:

  • 2 ripe peaches, diced
  • 1/4 cup red onion, finely diced
  • 1 small jalapeño, seeded and minced
  • juice of 1 lime
  • 2 tablespoons chopped fresh cilantro
  • pinch of salt

Additional:

  • 8 small corn or flour tortillas

Instructions

  1. Marinate the Chicken: Combine olive oil, lime juice, cilantro, garlic, cumin, chili powder, salt, and pepper. Add chicken thighs, toss to coat, and marinate for 30 minutes to 2 hours.
