2 ciabatta rolls, sliced in half
2 boneless, skinless chicken breasts
1/2cup pesto sauce
4 slices fresh mozzarella cheese
1 medium tomato, sliced
1cup arugula or baby spinach
1 tbsp olive oil
Salt and pepper to taste
Instructions
Preheat a grill or grill pan over medium-high heat.
Season chicken breasts with salt and pepper, then drizzle with olive oil.
Grill chicken for 5–6 minutes per side, or until fully cooked. Let rest for 5 minutes, then slice thinly.
Spread pesto sauce on the bottom halves of the ciabatta rolls.
Layer sliced chicken, mozzarella, tomato, and arugula on top.
Place the top halves of the ciabatta rolls on the sandwiches.
Optional: Grill the whole sandwich for 1–2 minutes per side to toast the bread and melt the cheese.
Serve warm and enjoy.
Notes
Use store-bought or homemade pesto for convenience.
Try adding roasted red peppers for extra flavor.
For a vegetarian version, substitute chicken with grilled vegetables.
