Description
A quick and flavorful sandwich made with grilled chicken, fresh pesto, and melty mozzarella on a crusty ciabatta roll. Perfect for lunch or dinner in just 25 minutes.
Ingredients
- 2 ciabatta rolls, sliced in half
- 2 boneless, skinless chicken breasts
- 1/2 cup pesto sauce
- 4 slices fresh mozzarella cheese
- 1 medium tomato, sliced
- 1 cup arugula or baby spinach
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat a grill or grill pan over medium-high heat.
- Season chicken breasts with salt and pepper, then drizzle with olive oil.
- Grill chicken for 5–6 minutes per side, or until fully cooked. Let rest for 5 minutes, then slice thinly.
- Spread pesto sauce on the bottom halves of the ciabatta rolls.
- Layer sliced chicken, mozzarella, tomato, and arugula on top.
- Place the top halves of the ciabatta rolls on the sandwiches.
- Optional: Grill the whole sandwich for 1–2 minutes per side to toast the bread and melt the cheese.
- Serve warm and enjoy.
Notes
- Use store-bought or homemade pesto for convenience.
- Try adding roasted red peppers for extra flavor.
- For a vegetarian version, substitute chicken with grilled vegetables.
