  • 40 saltine crackers
  • 1 cup unsalted butter
  • 1 cup light brown sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt

For Topping:

  • 1 cup white chocolate chips
  • 1/4 cup granulated sugar
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat Oven: Preheat oven to 400°F and line a 9×13-inch baking sheet with parchment paper or foil. Arrange saltine crackers in a single layer.
  2. Make Toffee: In a saucepan over medium heat, melt butter and brown sugar until boiling. Boil for 3 minutes, then remove from heat. Stir in vanilla, cinnamon, and salt. Pour over saltines and spread.
  3. Bake: Bake for 5 minutes. Remove from oven and sprinkle white chocolate chips over hot toffee. Spread once softened.
  4. Add Topping: Mix granulated sugar and cinnamon in a bowl. Sprinkle over white chocolate. Let cool, then refrigerate.
  5. Serve: Once set, break into pieces and enjoy!
