Cheesecake Dough:

1/2cup unsalted butter, softened
1/2cup granulated sugar
1/2cup brown sugar
1 large egg
1 teaspoon vanilla extract
Cookie Dough:
2 1/4cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon ground cinnamon (plus 1 tablespoon for topping)
Instructions
Preheat the oven: Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
Mix cream cheese and butter: In a large mixing bowl, beat the cream cheese and butter until smooth and creamy. Add 1/2 cup granulated sugar, brown sugar, egg, and vanilla extract, and mix until combined.
Combine dry ingredients: In a separate bowl, whisk together the flour, baking powder, baking soda, salt, and 1 teaspoon cinnamon. Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms.
Prepare cinnamon-sugar mixture: In a small bowl, mix the remaining 1/2 cup granulated sugar with 1 tablespoon cinnamon.
Form and bake cookies: Scoop tablespoon-sized portions of dough, roll into balls, and coat each ball in the cinnamon-sugar mixture. Place on baking sheets, flatten slightly, and bake for 10–12 minutes. Cool before serving.
